Because if you have ever gardened, you know that at put up time (harvest) there is more chopping going on than one would expect (especially when the blankety-blank-blank beans will not fit in the expletive deleted jars for their steaming (or now boiling over) hot water bath!! ..

But you get the idea. We treat our veggies like our meat, we encourage it to conform to certain parameters.
